I think you could be right with that symbolizing the abruptness of life. Eventually we all get sick and you never really do know when that's going to happen. Vladimir might not want to hear about his dreams because in the past they were hard to hear or they seemed pointless to him. I think the point of that is that each of us has a pet-peeve with someone they're close to. It could just be the one thing about Estragon that he finds insufferable.
Pozzo and Lucky's ailments do represent that no matter who you are bad things can happen to you whether master or slave rich or poor. Vladimir never wants to hear about Estragon's dreams because he is an optimist and Estragon is more a pessimist he fears that Estragon's dreams may be bad I guess.
