I don't really see much significance in the Englishman story. It was possibly just mentioned to help pass the time. On the contrary, the story about the thieves and Christ is significant. In this story Christ is the redemption for the thieves. The two thieves are representing Didi and Gogo, while Christ is Godot. This story is meant to represent the role of Godot, as sort of a redeemer for Didi and Gogo from the terrible state that they are in.
Didi is concerned about the fact that only one of the gospels tells the story of the two theives because he is trying to make the point that people only like to remember the things that give them hope. Although only one gospel mentions the salvation of a thief from damnation, it provides a sufficient hope for those who read the Gospels. For these reasons, salvation and hope, people also choose to believe this book more than the others.
